Heavy-Duty Retherm

Rethermalization is an essential part of COOK-CHILL.  The cook-chill process involves central food production, refrigeration or freezing of food for later use, and rethermalizing when the food is needed for serving. Carter-Hoffmann rethermalization cabinets enable remote feeding areas to reheat large quantities of food for serving, with minimal investment in equipment or space.

Reheating large quantities of food requires precision engineered heating systems to bring food to serving temperature.  You can't just blast food with a lot of hot air and expect to get good results.  Our cabinets offer a sophisticated air flow system for even heating and customized cooking cycles - each with a precise, four-step temperature profile to achieve the best result.

We offer several styles of retherm cabinets:

  • Heavy-duty RTH Series for correctional facilities - basket retherm of meal trays, with heavy-duty features to stand up to the correctional market
  • RTB Series basket retherm for pre-packaged meal trays or individually-wrapped food items are ideal for schools, healthcare facilites, or other volume feeding operations
  • HBR Series humidified rethermalization cabinets use the power of steam to retherm food in steam table pans

Save money with Carter-Hoffmann Cook and Hold Cabinets. They'll give you:

  • Increased Yields:  Shrinkage is reduced to 7-10%, down from 25% in a standard convection oven.
  • Increased Product Quality:  The gently convected air produced by our blower and duct system allows the meat to caramelize and retain moisture, cooking more consistently. Longer cooking times tenderize the meat.  And because gentle air circulation caramelizes and browns roasts naturally, there's no need to dress them up with gravies, sauces or rubs.
  • Lower Energy Costs:  Much lower BTUs than a standard convection oven. Plus, it allows food to be cooked overnight, at off-peak energy rates.
  • Lower Installation Costs:  No vent is required in most areas.
  • Product Versatility:  They're not just for roasts. Because they will reach temperatures of 320°F (160°C), a variety of items can be cooked, baked, or roasted.
